Austeja is the patron of the flowers, the protector of bees and women.
Her name is connected to the Lithuanian word "austyti" which means to continually go back and forth in a weaving motion.
Our team has weaved together two unique yeast strains to create this extremely smashable cidre perfect for enjoying year-round.
Made with 100% Fuji apples, this limited edition modern cidre tranquille was co-fermented with two specially selected yeast strains. The initial fermentation was performed with Lachancea thermotolerans harvested from Vesipidae Polistinae which lends a refined mellow lactic acid (yogurt-esque) character.
We worked with Akita-Konno based in Akita prefecture to select our special patented finishing yeast which is used in the production of ginjo styles of Nihonshu ( Japanese sake ). The yeast was selected for its intense fruity aroma-producing characteristics giving Austeja her, tropical and pome fruit aroma.
Austeja is a well balanced cidre of acidity and sweetness with very mild carbonation so it can be enjoyed as a pairing for a main course.

This cider release was developed in collaboration with wine and cider producer VinVie, Matsukawa, Nagano.
The VinVie Winery and Cidery facilities are nestled on the gradually rising slopes of the Kiso Mountains, adjacent Takemura orchard and vineyards, which provide pristine conditions for producing several varieties of Japan's most prized apples.
We teamed up with VinVie's up and coming cider maker, Takemura Tsuyoshi to design the challenging fermentation program for the Austeja release.
We selected Tokyo based artist Erica Ward to create the label artwork for the
Austeja visual concept.
Paying homage to Baltic ( Lithuania ) pagan goddess of bees. The character depicts the tranquil nature of the cider release and highlights the wasp where the acid producing yeast strain was sourced.
