Join us for a unique opportunity to experience a video journey to Kagoshima Kyushu to learn more about Japan's national spirit, Honkaku Shochu. Wayne Shennen takes a look at local history, IMO ( sweet potato ) Shochu production, fermentation and distillation and ways to enjoy the spirit. 

Upon his return to Tokyo, Wayne is joined by international whiskey expert, Robert Stockwell for a conversation over some non-tradtional food pairings.

RSVP attendees will receive a select

free sample tasting set of Honkaku Shochu.

This event requires advanced registration to join. Guest that RSVP will be eligible to receive a free tasting set with a variety of shochu selections. When the number of guests registered to join exceeds ( 55 ) seats a lottery for the shochu tasting sets will be held and selected guest will receive a tasting set. Priority will be given to those participants registering for the event by February 01, 2022. We will inform you when selected for a tasting set by February 05, 2022. We encourage guest to register at their earliest convenience. 

Presented in English. Tasting sets are available only in Japan.

HISTORY

  A look into the history of a regional shrine that held some long forgotten words of wisdom about sharing of Shochu.

 The host visits two popular regional distillers of different sizes to better understand the production of Imo Honkaku Shochu. Getting to the source we visit a local area farmer to better understand the historical journey of the Satsuma Imo.

 Our host joins a local Kagoshima Shochu expert at a well known Izakaya to discuss a variety of ways locals enjoy the spirit of the region. 

  Conversations with an international whisky expert, based in Tokyo, to better understand how Honkaku Shochu pairs with western dishes.

Born in New Zealand, Wayne has lived in Australia, Brazil, Japan and England, and has been working in Hospitality since 2002.  

He was the first New Zealander, and second in the Southern Hemisphere, to achieve the Advanced Level of Certified Sake Professionals. Author of the e-book 'Demystifying Sakè', he has worked in breweries in Ishikawa, Saga, and Gifu Prefectures, and visited many more.

Wayne is also a Certified Sommelier from the Court of Master Sommeliers, and achieved a Distinction from the French Wine Scholar programme.  In 2017 he came second in the New Zealand Sommelier of the year competition.  In 2017 he was also selected by Wine Australia to attend the 50 Sommeliers of the World programme, and in 2018 was one of only nine applicants in Australasia to be accepted to the Inaugural Family of XII Wine Tutorial.

The Japan Sake and Shochu Makers Association (JSS) is a non-profit organization that consists of sake and shochu producers throughout Japan. Members include producers of sake, honkaku shochu, awamori, and hon mirin.  As of March 2020, JSS is affiliated with 1,696 members, which include 1,410 sake breweries, 273 shochu distilleries, and 13 mirin makers under 47 regional associations.
